Dairy Free “Cream Cheese” Icing

Diet Restrictions

There were so many things I missed when I first cut gluten, eggs and dairy from my diet due to food intolerance and sensitivities. Each one of those dietary restrictions are hard on their own but combined, it’s a real doozy.

It was only recently when talking with another parent who is at the beginnings of her allergy journey that it dawned on me. I haven’t felt like I’ve been “living without” for quite some time.

This came about because she said that of all the things that she needs to give up, cream cheese icing is what she’s mourning. It made sense. We live in a remote area of Northern Canada and there is not a whole lot of selection at the grocer in the ways of specialty diet items. And fresh dairy-free products can’t just be ordered on Amazon. (They can’t, right?)

Sharing Great Allergen Free Products with Others

A patient recommended a vegan “dairy” brand to my husband, Kris in his Chiropractic clinic a while back. She actually brought with her on an appointment, a tub of Tofutti Better Than Cream Cheese for him to try. She travels a lot and stocks up on the specialty groceries she needs when she is in a major centre.

He excitedly brought it home and started experimenting. I could kiss her for that act of kindness. He ended up creating the most mouth watering, sweet and tangy “cream cheese” icing that I have ever had. So much that I don’t miss the dairy version. Not one bit.

Gluten Free Vegan Carrot Cake

Our first pairing of the icing was on a Gluten-free Vegan Carrot Cake. It was perfect. Recently, we tried it on the sugar-free, oil-free, gluten-free Perfect Vegan Carrot Cake recipe from Forks Over Knives. It was a match made in heaven.

Gluten Free Vegan Chocolate Icing

The second time we used Tofutti, Kris modified his original recipe to create a decadent chocolate icing to cover my birthday cake. It was outstanding! The cocoa adds body to the icing giving it a lovely spreading consistency.

We LOVE using this Gluten Free Vegan Chocolate Cake recipe from Kat at The Loopy Whisk. We’ve tried a lot of cake recipes and so many are just “meh”. This one is WOW. It is our go-to recipe because it’s simple and always yields excellent results.

And although the chocolate ganache icing she includes in her recipe is lovely, there’s something about our Tofutti Dairy Free Chocolate Cream Cheese Icing that brings the extra pizazz.

Word of caution though, make sure you use a plant based milk like soy or almond. (I can vouch for those) I used oat milk and it was a flop. It was the very first time that the recipe didn’t work for me. The photo above is from the second attempt using almond milk. Thankfully I had enough of the ingredients to start over or I would have been cake-less for my birthday!

Dairy Free “Cream Cheese” Icing

This sweet and tangy dairy free "cream cheese" icing is perfect atop cakes or muffins.

Equipment

  • hand mixer or stand mixer
  • medium bowl
  • spatula

Ingredients
  

  • 1/2 cup vegan margarine
  • 454 grams plain Tofutti cream cheese 2 containers
  • 1 tsp pure vanilla extract
  • 3 cups icing sugar

Instructions
 

  • In a medium bowl, beat Tofutti Cream Cheese and margarine together until smooth.
  • Mix in the vanilla extract.
  • Slowly incorporate the icing sugar and vanilla extract to the wet ingredients. Scrape down the sides with a spatula as needed.
  • Beat on high speed for 2-3 minutes.
